Equipment

  • 1 Dutch oven
  • 1 Sharp Knife
  • 4 Potatoes medium size

Ingredients
  

  • 1 tbsp Olive oil
  • 8 Carrots Sliced diagonally
  • 1 Onion Sliced or diced
  • 1 Clove Garlic Minced
  • 1 tsp Salt
  • ½ tsp Pepper
  • 2 lb Pork loin or boneless pork ribs
  • 1 tsp Thyme

Instructions
 

  • Coat Dutch oven with olive oil
  • Add potatoes
  • Add Garlic
  • Add Pork seasoned and thyme
  • Add Onions
  • Add carrots
  • Cover and cook / simmer on low heat for 2 hours.
  • Plate Potatoes, carrots and pork next to string beans, peas or baby lima.
  • Oh it's so good!
