Pork Ribs with vegetables in a Dutch oven

1 Dutch oven
1 Sharp Knife
4 Potatoes medium size
- 1 tbsp Olive oil
- 8 Carrots Sliced diagonally
- 1 Onion Sliced or diced
- 1 Clove Garlic Minced
- 1 tsp Salt
- ½ tsp Pepper
- 2 lb Pork loin or boneless pork ribs
- 1 tsp Thyme
Coat Dutch oven with olive oil
Add potatoes
Add Garlic
Add Pork seasoned and thyme
Add Onions
Add carrots
Cover and cook / simmer on low heat for 2 hours.
Plate Potatoes, carrots and pork next to string beans, peas or baby lima.
